Street Tacos


So delicious!! Who knew that meat, tortillas, onions and cilantro could be so addicting? This is something you could get off of a Taco Truck. If you know me, I am a taco truck fan.


flank steak: marinated with chile powder, cumin, coriander, green onions, garlic, lime juice, salt and oil

cilantro

corn tortillas


Grill the marinated meat, chop, then add to tortillas. You can add any toppings.

Quick, easy and most of all delicious.


*** these can be made with other meats: grilled chicken, chorizo, slow roasted pork or grilled fish.

Pizza Crust


makes 6 medium sized pizzas


6 cups flour

3 T salt

2 T yeast

1/2 cup Olive Oil

2 1/2 cup warm water or beer


mix all together and let rise, at least 2 hours. lasts on the counter for 1 week.


bake on a pizza stone for 8-10 minutes at 500. preheat at least 2 hours

Lemon Curd

1 tablespoon plus 2 teaspoons finely grated fresh lemon zest

1 cup fresh lemon juice

1 1/3 cups sugar

4 large eggs

1 3/4 sticks (3/4 cup plus 2 tablespoons) unsalted butter, cut into tablespoon pieces


Whisk together zest, lemon juice, sugar, eggs, and a pinch of salt in a 2-quart heavy saucepan. Add butter all at once and cook over moderately low heat, whisking constantly, until curd is thick enough to hold marks of whisk and first bubbles appear on surface, about 10 minutes. Immediately pour curd through a fine sieve into a bowl, then chill, covered.

Cabbage Slaw

slaw can be used for so many things...and is so tasty.


cabbage, REd or green or both

mayo

greek yogurt

shredded carrot

green onions, or red

red wine vinegar

chipotle pepper


the longer it sits, the better it is


I use this in tacos, as a side dish to ribs, in a pulled pork sandwich

Grilled Vegetables

I like to serve these cold or at room temp after making them. Yummy on a slice of french bread.


thin slices of eggplant, zucchini, portobello and red peppers- I use the mandolin slicer to make them all uniform.


Brush with EVOO and place on grill until limp.


Once they are all done...toss with

EVOO

lemon juice

garlic

salt and pepper

grated tomato

capers

Cranberry Beans


Cook the shelled beans in boiling salted water for 30 minutes, until soft.

Toss warm with:

garlic

olive oil

lemon zest/juice

salt and pepper

shopped parsley

Chile Rellano's


Roasted Poblano Peppers

Jack cheese

any other goodies

1 egg white for two peppers, whipped to soft peaks


Dredge in flour, cover in egg whites, pan fry, salt

Apple Oven Cake

serves 6

3T butter

1/4 cup brown sugar

cinnamon

3 apples, sliced

3 eggs

1/4t salt

1/2 cup flour

1/2 cup milk

top with lemon and powered sugar


blend eggs, milk and flour and pour over cooked apples

bake 425 for 15 minutes
