Lemon Curd

1 tablespoon plus 2 teaspoons finely grated fresh lemon zest
1 cup fresh lemon juice
1 1/3 cups sugar
4 large eggs
1 3/4 sticks (3/4 cup plus 2 tablespoons) unsalted butter, cut into tablespoon pieces




Whisk together zest, lemon juice, sugar, eggs, and a pinch of salt in a 2-quart heavy saucepan. Add butter all at once and cook over moderately low heat, whisking constantly, until curd is thick enough to hold marks of whisk and first bubbles appear on surface, about 10 minutes. Immediately pour curd through a fine sieve into a bowl, then chill, covered.

Pizza


Pizza Crust
makes 6 medium sized pizzas

6 cups flour
3 T salt
2 T yeast
1/2 cup Olive Oil
2 1/2 cup warm water

mix all together and let rise, at least 2 hours. lasts on the counter for 1 week.

bake on a pizza stone for 8-10 minutes at 500. preheat at least 2 hours

Grilled Flank Steak Tacos


I like to call them street tacos. So delicious!! Who knew that meat, tortillas, onions and cilantro could be so addicting? This is something you could get off of a Taco Truck. If you know me, I am a taco truck fan.

Street Tacos

flank steak: marinated with chile powder, cumin, coriander, green onions, garlic, lime juice, salt and oil
white onions
cilantro
corn tortillas

Grill the marinated meat, chop, then add to tortillas. You can add any toppings.
Quick, easy and most of all delicious.

*** these can be made with other meats: grilled chicken, chorizo, slow roasted pork or grilled fish.

Tracy's Crab


WOW!! Tracy's Crab is so good. When I was working at Mani Pedi, every year for my birthday Tracy Ng would make me Vietnamese crab. 

Tracy's Crab

dungeness crab
butter
cream
cilantro
thai basil
pepper

Fry the crab, then toss in the melted butter and cream mixture. Add the chopped herbs and fresh cracked pepper when serving. 

*** you can buy already cooked and cleaned crab and just heat in the cream, sometimes this is easier, and a lot less messy. but the fresh fried crab is so good

Fish n' Chips

Fish n' Chips

1 cup flour
1 cup beer
2 egg whites
salt

mix the flour, salt and beer and then fold in eggs. Dip and fry for a few minutes at 350. I use canola oil. Place on newspapers or paper bags. Yummy!! Serve with vinegar, usually malt. You can fry the chips before or after the fish. I usually do them in the oven. Toss with oil, garlic and rosemary.

Short Bread Cookies













Cookies

3 sticks butter, room temperature
1 cup sugar
3.5 cups AP flour
1 tsp vanilla
1/4 tsp salt

Paddle all ingredients until combined. Chill 30 minutes before rolling out. Bake 350 for 20-25 minutes.

Mini Lemon Cakes


So good and so easy to make. Play around and create other flavors.....

Basic Recipe:
1 yellow cake mix (boxed, I know!)
4 eggs
3/4 cup oil
1- 3.5oz box pudding, I used lemon
Lemon Zest

Glaze:
4 cups powered sugar
1/3 cup fresh lemon juice
Lemon zest
3T oil
3T water

Mix all together and bake at 350 for 12 minutes. I use the mini muffin tins so they come out bite sized.

Cool. Make glaze and dip with a fork, place on wire rack. May be dipped twice for extra sweetness.
