Easy as 1 2 3 Carbonara


3 egg yolks, room temperature
1/2 c. Parmesan cheese
salt and pepper
2 cloves minced garlic
pinch of red pepper flakes (optional)
2 tbs. olive oil
1/4 lb. pancetta, or bacon diced
1 lb. spaghetti

Beat egg yolks, set aside. Bring large pot of water to a boil, add salt. In a large frying pan, sauté pancetta in olive oil until crisp, about 5 minutes. Remove with slotted spoon.

Meanwhile, cook pasta according to directions until barely al denté. Sauté garlic in same frying pan 1-2 minutes, don't brown. Add drained pasta to garlic. Turn off heat.

Sprinkle red pepper flakes in, if desired, and pancetta. Pour eggs over pasta, and toss immediately until completely combined. Toss with Parmesan until combined.

Serve with extra cheese.

Sugar Cookies


2 cups flour
½ teaspoon baking powder
½ teaspoon salt
1 stick plus 2 tablespoons unsalted butter
1 cup sugar
1 large egg
1 large egg yolk
1 teaspoon vanilla
orange zest
pinch of cinnamon

bake 350 for 9-11 minutes on silpat

Homemade Beef Jerky


Black Pepper Jerky
3 cups ale
2 cups soy sauce
1/2 cup worcestershire
2 tbls cracked peppercorns
2 pounds beef top round/bottom

slice meat against the grain, 1/4 inch thick and marinate for 6 to 8 hours.
place on a wire rack, with sheet pan in a 200 oven.
bake 4 hours

Sweet & Spicy Jerky
1-1/2 cups coffee
1-1/2 cups coke
2 star anise
2 cups soy sauce
1/2 cup fish sauce
1/2 cup fresh lime juice
1/4 cup sambal oelek

cook coffee and coke together until reduced by half, add the rest of the ingredients.
slice meat against the grain, 1/4 inch thick and marinate for 6 to 8 hours.

Banana Pancakes


  • 1 cup all-purpose flour
  • 1 tablespoon white sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 2 ripe bananas, mashed

makes about 12 pancakes

Fast and Easy Hummus

1 can chickpeas, drained and rinsed
1 small clove of garlic
1 juicy lemon
1/4 cup each of Olive oil, tahini and water
a few pinches of smoked paprika
salt

puree till smooth, may need less water

Serve with pita chips and veggies
